Rum Sauce
2 sticks butter
3 cups sugar
½ cup vanilla
4 eggs - whipped
1 cups half & half
½ cup dark rum
Heat all ingredients except rum, until just before boiling.
Reduce heat, add rum and stir constantly until it
reaches a smooth, blended texture. Cut several slits
into the bread pudding and pour rum sauce over the
top. “This is so good it’ll make you wanta slap ya
momma,” said Mistretta, getting a bit carried away
with his own product.
Seafood Jambalaya
2 ½ Lbs. 71-90 count peeled shrimp
2 Lbs. Crawfish tail meat
1 Lb. Claw crabmeat
7 Cups water or seafood stock
1 Can Rotel 28oz.
4 Tablespoons butter
2 Cups onion
2 Cups celery
1 Cup green onions
1 Cup bell pepper
2 Teaspoons garlic
2 Bay leaves
3 ½ Cups rice
1 Tablespoon crab boil powder
1 Tablespoon Tabasco Sauce or to taste
2 Tablespoons Louisiana Hot Sauce or to taste
1 Dash black pepper
1 Oz. Thyme
1 Oz. Basil
1 Oz. Jerry’s ZydeCajun seasoning
1 Oz. Seafood Magic
There are a wide variety of ways to make jambalaya,
with chicken and sausage, or shrimp, or ham, or
even duck or alligator. Some involve tomatoes and
tomato sauce, some use chicken or beef stock instead.
This first one uses both tomatoes and chicken stock,
and is a New Orleans Creole-style "red" jambalaya, as
opposed to one made with only stock, a more Cajunstyle"
brown" jambalaya.
Jambalaya should be cooked in a Dutch oven or a
heavy gauge pot to prevent burning or sticking. Spray
pot or Dutch oven with non stick spray. On high heat,
add butter, onions, celery, bell pepper, garlic and saute’
for about 5-6 minutes. Stir in water, (or seafood stock)
rice and the rest of the ingredients until it comes to a
boil. Reduce heat to low, stir well and cover. Let this
cook for about 30-40 minutes. Jambalaya is cooked
when rice has absorbed all of the liquid, and is soft
to the taste. Remove from pot and place in serving
dish. This is best served with a tossed salad, French
bread, and a cold beverage. AaaaEeee! Life is good -
enjoy. (Serves about 12)
