A Sampling of Jerry’s Favorite Recipes
Jerry’s Cajun Chicken Penne’ Pasta
4 boneless chicken breasts, cut into bite-sized pieces
8 cups of cooked penne’ pasta
2 tablespoons butter
1 teaspoon minced garlic
2 cups half & half
3 cups shredded provolone cheese
1 cup parmesan cheese
Jerry’s ZydeCajun Seasoning to taste
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon Melinda’s Habanero hot sauce (or to taste)
1 cup diced green onions
Heat a large, fairly deep skillet, to medium temperature, and
then add the butter and garlic. Once the skillet is hot, add the chicken
and sauté for about 5-8 minutes until the chicken is browned a
bit. Then add the half and half to the chicken, stirring until the half
and half is warm. Reduce your temperature if it starts to bubble.
Add your seasoning and herbs and some of the green onions to season.
Stir or move your pan back and forth to blend the ingredients
and to prevent sticking or burning. Reduce your heat to low, then

slowly sprinkle the provolone cheese over the entire area of the contents,
and then the parmesan. Again, blend the ingredients together
by gently stirring or moving the pan back and forth. Once all of
these are blended and the cheese has completely melted and has
formed a creamy sauce type texture, add the pasta and stir until is
has become one with the sauce. AaaaEeee! Now, sprinkle the rest of
you green onions over the contents and remove from pan, and serve.
This should serve 4 people or 2 Cajuns. This is great with a nice
chardonnay or Pinot Grigo.
Jerry’s Bread Pudding with Rum Sauce
12 1" slices of French bread
2 cups milk
2 eggs
1 tablespoon vanilla
2 cups sugar
1 can evaporated milk
½ cup raisins
½ cup diced apples
½ teaspoon ginger
½ teaspoon nutmeg
1 teaspoon cinnamon
In a large mixing bowl, add all ingredients except the bread. Mix
all the ingredients together until well blended. Then fold the bread
in, stirring gently so not to smash the bread. Continue to coat the
bread with all ingredients until the bread is soaked with milk. Pour
into a 2 inch deep, pre-greased baking pan. Sprinkle top with cinnamon
and bake at 350 degrees for approximately 30 minutes, or until
it is done. Stick a toothpick or fork in the middle and test to see if it
is still moist. If so, then return to oven and cook for a few more
minutes. (Continued)
